Prepare the Sweet Soy Ginger Glaze
In a small saucepan, combine soy sauce, brown sugar, grated ginger, minced garlic, and rice vinegar. Bring to a simmer over medium heat, stirring until the sugar dissolves. Allow to simmer for 5-7 minutes until slightly thickened. Remove from heat and let it cool.

Cook the Chicken or Tofu
If using chicken, cut it into small cubes. In a skillet over medium-high heat, add a little oil and cook the chicken or cubed tofu until golden brown and cooked through, about 5-7 minutes. Pour the sweet soy ginger glaze over the cooked protein and stir well to combine. Cook for another 2-3 minutes to heat through.

Prepare the Wontons
Fry the wonton wrappers in hot oil until crispy and golden brown. Remove and drain on paper towels.

Make the Spicy Aioli
In a small bowl, mix together mayonnaise, sriracha sauce, and lime juice until smooth. Adjust the spice level according to your preference.

Assemble the Wraps
Take a lettuce leaf and add a spoonful of the cooked chicken or tofu mixture. Top with crispy wonton pieces, chopped peanuts, and a drizzle of spicy aioli. Wrap and enjoy!
