Prepare the Steak

Marinate and Sear
In a bowl, mix soy sauce, mirin, sesame oil, rice vinegar, salt, and pepper. Marinate the sirloin steak for at least 30 minutes. Preheat a skillet over high heat and sear the steak for about 1-2 minutes on each side until browned. Remove from heat and let rest for 10 minutes before slicing thinly.
Make the Ponzu Sauce

Combine Ingredients
In a small bowl, combine soy sauce, citrus juice, rice vinegar, mirin, and katsuobushi. Let it sit for 15 minutes to infuse the flavors, then strain out the flakes.

Assemble Sushi
Cook sushi rice according to package instructions. Once cool, lay a nori sheet on a bamboo mat. Spread a thin layer of rice, then layer with slices of fresh salmon or tuna, avocado, and cucumber. Roll tightly and slice into bite-sized pieces. Sprinkle sesame seeds on top.
