Method
Preparing the Roasted Broccoli

Roast the Broccoli
Preheat the oven to 200°C (400°F). Toss the broccoli florets with olive oil, salt, and pepper. Spread them on a baking sheet and roast in the oven for 15-20 minutes until tender and slightly charred.
Cooking the Rice Noodles

Cook the Rice Noodles
In a pot, bring water to a boil and cook the rice noodles according to package instructions, usually about 4-6 minutes. Drain and set aside.
Making the Peanut Prawn Curry

Sear the Prawns
In a large skillet over medium-high heat, add a bit of oil and sear the prawns for 2-3 minutes on each side until they are pink and cooked through. Remove them from the skillet and set aside.

Prepare the Curry Sauce
In the same skillet, add curry paste and cook for 1 minute until fragrant. Pour in the coconut milk and bring to a gentle simmer. Stir in the peanut butter and fish sauce, mixing until well combined.

Combine Everything
Add the seared prawns back into the skillet and cook for an additional 2-3 minutes until heated through. Stir in lime juice and adjust seasoning to taste.

Serve the peanut prawn curry over a bed of rice noodles, top with roasted broccoli, and garnish with fresh coriander leaves.
