Preparation

    Make the Salsa

    In a bowl, combine diced tomatoes, chopped onion, minced garlic, chopped cilantro, lime juice, smoked paprika, and salt. Mix well and set aside.

    Prepare the Avocado Cream

    In a blender, combine the flesh of the avocado, sour cream, lime juice, and salt. Blend until smooth and creamy. Adjust seasoning to taste.

Assembly

    Assemble the Nachos

    On a large baking sheet, layer tortilla chips, pulled chicken, refried beans, and pickled jalapeños. Spoon the smoky salsa over the top.

    Add the Avocado Cream

    Drizzle the avocado cream over the assembled nachos.

    Bake

    Preheat the oven to 180°C (350°F). Bake the nachos for about 10-15 minutes, or until the chips are heated through and slightly crispy.

    Remove from the oven and serve immediately while hot, garnished with additional cilantro if desired.
