Cake Preparation

    Melt Chocolate and Butter

    Preheat the oven to 200°C (400°F). In a double boiler, melt the dark chocolate and unsalted butter together, stirring until smooth. Remove from heat and let cool slightly.

    Mix Ingredients

    In a mixing bowl, whisk together the sugar, eggs, and egg yolks until pale and thick. Stir in the melted chocolate mixture and vanilla extract.

    Add Flour and Salt

    Gently fold in the flour and a pinch of salt until just combined. Do not overmix.

    Prepare Ramekins

    Grease four ramekins with butter and dust with cocoa powder. Pour the batter evenly into the ramekins, filling them about 3/4 full.

    Bake

    Place the ramekins on a baking tray and bake in the preheated oven for about 12-14 minutes or until the edges are set but the center is still soft.

    Cool and Serve

    Remove from the oven and let cool for 1 minute. Carefully invert each ramekin onto a plate. Serve warm with fresh raspberries and a scoop of Tahitian vanilla ice cream.
