Make the Pastry

    Prepare the Dough

    In a large bowl, mix the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the cold water until the dough comes together. Divide the dough into two balls, wrap in plastic wrap, and refrigerate for at least 1 hour.

    Roll Out the Dough

    On a floured surface, roll out one ball of dough to fit your pie dish. Place it in the dish and trim the edges. Roll out the second ball for the top crust.

Prepare the Filling

    Combine Ingredients

    In a large bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice. Toss until the apples are well coated.

    Add Toasted Almonds

    Fold in the chopped toasted almonds into the apple mixture.

Assemble and Bake

    Assemble the Pie

    Pour the apple filling into the pie crust. Cover with the second rolled-out dough, sealing the edges by crimping them together. Cut slits in the top crust to allow steam to escape.

    Bake the Pie

    Preheat the oven to 425°F (220°C). Bake the pie for 45-50 minutes, or until the apples are tender and the crust is golden brown. Cool for at least 15 minutes before serving.

    Serve the baked apple pie warm with a scoop of Canadian maple ice cream on top.
