Preparing the Burger Patty

    Sauté the Vegetables

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onions and garlic, sauté until translucent. Then add the mushrooms and cook until soft, about 5 minutes.

    Combine Ingredients

    In a mixing bowl, combine the cooked brown rice, sautéed mushroom mixture, chopped almonds, miso paste, salt, and black pepper. Mix until well combined.

    Form the Patties

    Divide the mixture into 4 equal portions and form into burger patties.

    Cook the Patties

    In the same skillet, add the remaining tablespoon of olive oil and heat over medium heat. Cook the patties for about 5-7 minutes on each side or until golden brown.

Assembling the Burger

    Toast the Buns

    Lightly toast the whole grain burger buns on a skillet or grill.

    Assemble

    Place a veggie patty on the bottom half of each bun, top with a handful of arugula, and cover with the top half of the bun.
