Doughnut Preparation

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

    Combine Wet Ingredients

    In another bowl, beat the eggs, then add milk and vanilla extract. Mix until smooth.

    Combine Mixtures

    Pour the wet mixture into the dry ingredients and gently fold until just combined. Do not overmix.

    Heat Oil

    In a deep pot or fryer, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

    Fry Doughnuts

    Using a spoon or a small ice cream scoop, carefully drop spoonfuls of the dough into the hot oil. Fry for about 2-3 minutes on each side or until golden brown.

    Remove the doughnuts from the oil and place them on a paper towel-lined plate to drain excess oil.

Lemon Curd Preparation

    In a saucepan, whisk together the eggs, granulated sugar, lemon juice, and lemon zest until smooth.

    Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 10 minutes).

    Remove from heat and stir in the butter until melted and fully incorporated.
