    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick, to create fries.

    Soak the Potatoes

    Place the cut fries in a large bowl of cold water and soak for at least 30 minutes to remove excess starch. This will help them become crispier when fried.

    Heat the Oil

    In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Fry the Potatoes

    Drain and pat dry the soaked fries with paper towels. Fry them in batches for about 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Season the Fries

    While the fries are still hot, drizzle with truffle oil and sprinkle with salt and grated Parmesan cheese. Toss gently to combine.

    Mix the Ingredients

    In a medium bowl, combine mayonnaise, grainy mustard, minced garlic, and lemon juice. Stir until well combined.

    Add salt and black pepper to taste. Adjust the seasoning according to your preference.

    Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
