Method

Preparing the Ribeye

    Season the Steak

    Generously season the ribeye steak with salt and black pepper on both sides.

    Sear the Steak

    In a skillet, heat olive oil over medium-high heat. Once hot, add the ribeye and sear for 4-5 minutes on each side for medium-rare, adjusting time for desired doneness.

    Baste with Garlic Butter

    In the last minute of cooking, add garlic butter to the skillet (see garlic butter directions) and baste the steak with the melted butter.

    Rest the Steak

    Remove the steak from the skillet and let it rest for 5-10 minutes before slicing.

Making the Garlic Butter

    Prepare the Garlic Butter

    In a small bowl, combine softened unsalted butter, minced garlic, chopped parsley, and lemon juice. Mix well until combined and set aside.

Preparing the Peppercorn Sauce

    Crush Peppercorns

    Using a mortar and pestle, crush the black peppercorns coarsely.

    Cook the Sauce

    In the same skillet used for the steak, add the beef broth and crushed peppercorns. Bring to a simmer, and then add heavy cream and soy sauce. Stir and cook for an additional 3-5 minutes until thickened.

Making Crispy Mashed Potatoes

    Boil the Potatoes

    Peel and chop the potatoes into chunks. Boil in salted water until fork-tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth.

    Crisp the Potatoes

    Spread the mashed potatoes in a baking dish, top with cheddar cheese, and drizzle with olive oil. Bake at 425°F (220°C) for 20-25 minutes until crispy.

    Sprinkle with chopped green onions before serving.

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add asparagus and carrots, season with salt and black pepper, and sauté for about 5-7 minutes until tender.
