Method

Prepare the Chicken Filling

  1. 1

    Step 1

Dice the chicken breast into small, bite-sized pieces.

  2. 2

    Step 2

In a bowl, combine soy sauce, grated ginger, minced garlic, and Szechuan peppercorns. Add the diced chicken and marinate for at least 15 minutes.

  3. 3

    Step 3

Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 6-8 minutes.

  4. 4

    Step 4

Add chopped green onions and shredded carrot to the skillet, and cook for an additional 2-3 minutes until vegetables are softened.

Make the Sweet Soy Ginger Glaze

  1. 5

    Step 1

In a small saucepan, combine soy sauce, brown sugar, grated ginger, and rice vinegar. Bring to a simmer over medium heat.

  2. 6

    Step 2

Simmer for 5-7 minutes until slightly thickened. Remove from heat and set aside.

Prepare the Spicy Aioli

  1. 7

    Step 1

In a bowl, mix together mayonnaise, Sriracha sauce, and lime juice until well combined.

Assemble the Lettuce Wraps

  1. 8

    Step 1

Take a lettuce leaf and add a spoonful of the chicken filling in the center.

  2. 9

    Step 2

Drizzle the sweet soy ginger glaze over the chicken filling.

  3. 10

    Step 3

Top with crispy wontons and chopped peanuts.

  4. 11

    Step 4

Add a drizzle of spicy aioli for extra flavor.

  5. 12

    Step 5

Wrap the lettuce around the filling and enjoy!
