Steak Preparation

Marinate the Steak
In a bowl, mix soy sauce, mirin, sugar, minced garlic, minced ginger, and black pepper. Place the ribeye steaks in the mixture, ensuring they are well coated. Cover and let marinate for at least 1 hour in the refrigerator.

Ponzu Sauce Preparation

Make the Ponzu Sauce
In a saucepan, combine soy sauce, yuzu juice, rice vinegar, and the piece of kombu. Bring to a simmer over low heat, then stir in bonito flakes and remove from heat. Let it cool, then strain to remove the solids.
Sushi Preparation

Prepare Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, mix rice with rice vinegar, sugar, and salt, and let it cool.

Assemble the Sushi
Place a nori sheet on a bamboo sushi mat. Spread a thin layer of sushi rice over the nori, leaving a small border at the top. Lay down slices of salmon (or tuna), avocado, and cucumber. Roll tightly from the bottom, sealing the edge with a little water. Repeat with remaining ingredients.

Slice and Serve
Using a sharp knife, slice the sushi rolls into bite-sized pieces. Serve with wasabi, pickled ginger, and ponzu sauce for dipping.
