Method

Preparation of Seafood

1

Slice the Seafood

Thinly slice the sea scallops and raw prawns into bite-sized pieces and place them in a glass or ceramic bowl.

Marinade

2

Mix the Citrus Juices

In a separate bowl, combine the lime juice, lemon juice, and orange juice. Stir well to mix.

3

Add the Marinade

Pour the citrus marinade over the sliced seafood. Ensure that the seafood is fully submerged in the juice. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the seafood to 'cook' in the acidity of the juices.

Chopping Vegetables and Herbs

4

Prepare the Vegetables

Finely chop the red onion, cucumber, tomato, and jalapeño pepper. Add these to the bowl with the seafood after the marination time.

5

Add Fresh Herbs

Chop the fresh cilantro and add it to the mixture.

Final Seasoning

6

Season the Ceviche

Season the ceviche with salt and black pepper to taste. Mix everything gently to combine.

Serving

7

Serve the Ceviche

Spoon the ceviche into serving bowls. Garnish with additional cilantro if desired. Serve chilled.
