Create the Marinade

In a medium bowl, combine the sake, mirin, soy sauce, brown sugar, sesame oil, grated ginger, and minced garlic. Whisk until the sugar is dissolved and the ingredients are well blended.

Marinate the Fish

Place the sablefish fillets in a shallow dish and pour the marinade over them. Ensure the fish is evenly coated. Cover and refrigerate for at least 1 hour, or ideally overnight for better flavor absorption.

Preheat the Oven

Preheat your oven to 400°F (200°C).

Prepare the Baking Dish

Line a baking dish with parchment paper or lightly grease it to prevent sticking.

Remove Excess Marinade

Take the marinated sablefish out of the refrigerator and remove it from the marinade, allowing any excess to drip off.

Season the Fish

Sprinkle salt and pepper evenly over the fillets.

Place the fillets in the prepared baking dish and bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork.
