Season the Prime Rib
Rub the prime rib roast with salt, black pepper, garlic powder, and onion powder on all sides. Ensure an even coating.

Slow Roast the Prime Rib
Preheat your oven to 225°F (107°C). Place the seasoned prime rib in a roasting pan and cook for approximately 3-4 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare. Remove from the oven and let rest for 20 minutes before slicing.

Slice the Prime Rib
Using a sharp knife, thinly slice the rested prime rib roast against the grain.

Assemble the Sandwich
Slice the ciabatta rolls in half. Layer the sliced prime rib on the bottom half, add a slice of provolone cheese, a handful of fresh arugula, and a tablespoon of horseradish sauce. Top with the other half of the ciabatta roll.

Serve with Au Jus
Serve the sandwiches warm with a bowl of au jus on the side for dipping.
