Method

Prepare Taco Shells

    Cook Sushi Rice

    In a medium saucepan, combine sushi rice with 1 cup of water and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes or until rice is tender and water is absorbed.

    Season Rice

    Once cooked, transfer rice to a bowl. Mix rice vinegar, sugar, and salt in a small bowl until dissolved, then fold this mixture into the rice. Allow to cool slightly.

    Form Taco Shells

    Cut nori sheets into rectangles large enough to fold into taco shapes. Take a small amount of sushi rice and form it into a base in the center of each nori rectangle. Fold the nori around the rice to create a taco shell.

Cook Lobster and Prawns

    Sauté Seafood

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add lobster meat and prawns, cooking for about 4-5 minutes until prawns are pink and fully cooked. Season with lemon juice, salt, and pepper to taste. Remove from heat.

Assemble Tacos

    Fill Tacos

    Take each nori taco shell and fill it with sautéed lobster and prawns, followed by sliced avocado, cucumber, radish, and chopped cilantro.

    Add Sauce

    Drizzle sriracha or spicy mayo over the filled tacos for an extra kick.
