Dough Preparation

    Make the Dough

    In a large bowl, mix the all-purpose flour and salt. Gradually add the water while stirring until a dough begins to form.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until the dough is smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

Filling Preparation

    Combine the Filling Ingredients

    In a mixing bowl, combine ground pork, green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and pepper. Mix well until all ingredients are evenly combined.

Assembly

    Roll out the Dough

    After resting, divide the dough into small pieces (about 1 inch in size). Roll each piece into a thin round wrapper (about 3 inches in diameter) on a floured surface.

    Fill the Dumplings

    Place about 1 tablespoon of filling in the center of each dough wrapper. Moisten the edges with water, fold the dough over the filling, and pinch to seal tightly.

Cooking

    Pan-Fry the Gyoza

    In a large skillet, heat a tablespoon of oil over medium heat. Place the gyoza in the skillet and cook for about 2-3 minutes until the bottom is golden brown.

    Steam the Gyoza

    Carefully add 1/4 cup of water to the skillet and cover immediately with a lid. Steam for about 5-7 minutes until the water has evaporated and the gyoza are cooked through.

    In a small bowl, combine soy sauce, rice vinegar, and hot mustard. Stir well and set aside for serving.
