Make the Pastry Dough
In a large bowl, combine all-purpose flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough comes together. Divide into two equal portions, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Apple Filling
In a large bowl, combine sliced apples, granulated sugar, ground cinnamon, ground nutmeg, lemon juice, and cornstarch. Toss until the apples are evenly coated. Set aside to let the flavors meld.

Assemble the Pies
Preheat your oven to 375°F (190°C). Roll out one disc of pastry on a lightly floured surface to fit your individual pie dishes. Place the rolled pastry in the dishes, fill with the apple mixture, and roll out the second disc to cover the pies. Seal the edges and cut slits in the top for steam to escape.

Add Almonds
Sprinkle sliced almonds evenly over the top of each pie.

Bake the Pies
Place the assembled pies on a baking sheet and bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown and the filling is bubbling.
