Method

Prepare Hummus

  1. 1

    Blend Chickpeas

In a food processor, combine the canned chickpeas, tahini, garlic cloves, lemon juice, olive oil, ground cumin, salt, and water. Blend until smooth. If the mixture is too thick, add a little more water to reach your desired consistency.

  2. 2

    Taste and Adjust

Taste the hummus and adjust seasoning as needed, adding more salt or lemon juice to suit your preference.

Make Tzatziki Sauce

  1. 3

    Prepare Cucumber

Grate the cucumber and squeeze out excess moisture using a clean kitchen towel or cheesecloth.

  2. 4

    Mix Ingredients

In a bowl, combine the Greek yogurt, grated cucumber, minced garlic cloves, dill, lemon juice, and salt. Stir until well combined.

  3. 5

    Chill

Cover the tzatziki sauce and refrigerate for at least 30 minutes to allow the flavors to meld.

Prepare Garnishes

  1. 6

    Slice Olives

Slice the pitted olives into halves or quarters, depending on your preference.

  2. 7

    Toast Pita Bread

Preheat the oven to 400°F (200°C). Place the pita bread on a baking sheet and toast in the oven for about 5-7 minutes, or until crispy and golden.

Serve

  1. 8

    Plate the Hummus

Spread the hummus on a serving plate, creating a well in the center for drizzling olive oil.

  2. 9

    Add Tzatziki and Garnishes

Spoon the tzatziki sauce into the well, scatter the sliced olives around the hummus, and serve with crispy pita.
