Prepare the Prawns
Rinse the large prawns under cold water and pat them dry with paper towels. This helps to ensure they become crispy when fried.

Make the Tempura Batter
In a mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add the ice-cold water to the dry mixture, whisking gently until just combined. Do not overmix; a few lumps are okay.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can test the oil by dropping a small amount of the batter into it; if it sizzles and rises to the surface, it’s ready.

Fry the Prawns
Dip each prawn into the tempura batter, allowing excess batter to drip off. Carefully place the battered prawn into the hot oil. Fry in batches, being careful not to overcrowd the pan. Fry until golden and crispy, about 2-3 minutes per side. Use a slotted spoon to remove the prawns and drain on paper towels.
