Crab Cake Mixture

Cooking

Method

Prepare the Crab Cake Mixture

  1. 1

    Combine Ingredients

In a large mixing bowl, gently combine the fresh crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, green onion, celery, bread crumbs, beaten egg, salt, black pepper, and Old Bay seasoning. Mix until just combined, being careful not to break up the crab meat too much.

  2. 2

    Chill the Mixture

Cover the bowl with plastic wrap and refrigerate the crab cake mixture for at least 30 minutes. This helps the flavors meld and makes the mixture easier to form into cakes.

Cook the Crab Cakes

  1. 3

    Form the Cakes

After chilling, remove the mixture from the refrigerator. With your hands, form the mixture into patties, about 2-3 inches in diameter. Place the formed crab cakes on a plate.

  2. 4

    Heat the Oil

In a large skillet, heat the olive oil over medium heat until shimmering.

  3. 5

    Cook the Crab Cakes

Carefully add the crab cakes to the skillet, cooking in batches if necessary to avoid overcrowding. Cook for about 4-5 minutes on each side, or until golden brown and heated through.

  4. 6

    Serve

Remove the crab cakes from the skillet and place them on paper towels to drain any excess oil. Serve hot with lemon wedges on the side.
