Prepare the Chicken Teriyaki

Marinate the Chicken

In a bowl, combine soy sauce, honey, rice vinegar, minced garlic, and minced ginger. Add the boneless, skinless chicken thighs and let them marinate for at least 30 minutes.

Cook the Chicken

Heat vegetable oil in a skillet over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and cook for about 6-7 minutes on each side until the chicken is cooked through and golden brown.

Prepare the Sauce

In a small bowl, mix cornstarch and water until smooth. Add the reserved marinade to the skillet and bring to a simmer. Stir in the cornstarch mixture and cook until the sauce thickens, about 2-3 minutes.

Slice the Chicken

Once the chicken is cooked, remove it from the skillet, slice it into strips, and return it to the skillet, coating it with the thickened teriyaki sauce.

Assemble the Rice Bowl

Prepare the Vegetables

While the chicken is cooking, steam the broccoli florets until tender, about 5 minutes. Julienne the carrot.

Assemble the Bowl

In a serving bowl, place a generous scoop of cooked jasmine rice. Top with the teriyaki chicken, steamed broccoli, and julienned carrots.

Garnish

Sprinkle sesame seeds and sliced green onions over the top of the rice bowl before serving.
