Chicken Preparation

    Prepare Chicken

    Preheat your oven to 375°F (190°C). Take the chicken breasts and season them with salt and black pepper on both sides.

    Breading the Chicken

    Set up a breading station: place the flour in one shallow dish, beat the eggs in another dish, and put the breadcrumbs in a third dish. Dredge each chicken breast in flour, dip into the beaten eggs, and then coat with breadcrumbs.

    Fry the Chicken

    Heat olive oil in a large oven-safe skillet over medium heat. Once hot, add the breaded chicken breasts and cook until golden brown, about 4-5 minutes per side.

    Add Cheese

    Once browned, remove the skillet from heat. Top each chicken breast with mozzarella and Parmesan cheese.

    Bake Chicken

    Transfer the skillet to the preheated oven and bake for 20 minutes, or until the chicken is cooked through and the cheese is melted.

Spaghetti Pomodoro

    Cook Spaghetti

    While the chicken is baking, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.

    Make the Sauce

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add canned tomatoes, salt, and black pepper. Simmer for about 10 minutes.

    Combine Spaghetti and Sauce

    Once the sauce has thickened, add the cooked spaghetti to the skillet. Toss to combine and add fresh basil. Adjust seasoning if necessary.

    Plate the Dish

    Once the chicken is done baking, remove it from the oven. Serve the chicken Parmesan on a plate alongside the spaghetti pomodoro. Garnish with additional fresh basil if desired.
