Preparing Cauliflower

    Roasting the Cauliflower

    Preheat oven to 425°F (220°C). Break the cauliflower into small florets and place them in a bowl.

    Drizzle the olive oil over the cauliflower florets, then sprinkle the smoked paprika, cumin, and salt. Toss well to coat evenly.

    Spread the cauliflower on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, until golden and tender, flipping halfway through.

Making Chipotle Mayo

    In a small bowl, combine mayonnaise, chipotle peppers, and lime juice.

Preparing Cilantro Chimichurri

Assembling Tacos
