Preparing the Rice
Rinse the Sushi Rice
In a fine mesh sieve, rinse 1 cup of sushi rice under cold water until the water runs clear to remove excess starch.
Cook the Rice
Combine the rinsed rice and 1.25 cups of water in a rice cooker or pot. Cook according to the rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes. Let it sit covered for 10 minutes after cooking.
Fluff the Rice
After resting, fluff the rice with a fork and set aside to cool.
Marinating the Tuna
Prepare the Tuna
Cut 8 oz of Ahi tuna into small cubes and place in a mixing bowl.
Mix the Marinade
In a separate bowl, combine 2 tbs of soy sauce, 1 tbs of sesame oil, 2 tbs of finely chopped green onions, 1 tbs of sesame seeds, 1 tsp of sriracha, and 1 tbs of lime juice. Mix well.
Marinate the Tuna
Pour the marinade over the cubed tuna and gently stir to coat. Let it marinate in the refrigerator for 15-20 minutes.
