Prepare the Coconut Rice
Cook the coconut rice according to package instructions. Typically, combine 1 cup of rice with 1 cup of coconut milk and a pinch of salt, bring to a boil, then simmer until cooked.

Prepare the Carrot Miso Dressing
In a small bowl, whisk together miso paste, grated carrot, sesame oil, rice vinegar, and water until smooth.

Fry the Wontons
Heat oil in a deep skillet over medium heat. Fry the wonton wrappers until golden and crispy, about 1-2 minutes per side. Drain on paper towels.

Cube the sashimi grade Ahi Tuna into bite-sized pieces. If desired, marinate with a little soy sauce and sesame oil for added flavor.
