Preparation

1. Melt Chocolate and Butter

Preheat your oven to 200°C (400°F). In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water, stirring until smooth.

2. Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar and large eggs until the mixture is pale and fluffy.

3. Combine Mixtures

Add the melted chocolate and butter mixture to the egg and sugar mixture, stirring gently to combine.

4. Add Dry Ingredients

Sift the all-purpose flour and salt into the chocolate mixture and fold gently until just combined.

5. Prepare Ramekins

Grease four ramekins with butter and lightly dust with flour. Pour the batter evenly into each ramekin.

6. Bake

Place the ramekins in the preheated oven and bake for 12-14 minutes, until the edges are firm but the center is still soft.

7. Cool and Serve

Remove from oven and let cool for 1 minute. Invert each ramekin onto a plate and serve immediately with fresh raspberries and a scoop of Tahitian vanilla ice cream.
