    Make the Pastry

    In a large mixing bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Add cold water, one tablespoon at a time, mixing until the dough just comes together. Divide the dough into two disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    Prepare the Filling

    In a large bowl, combine the sliced apples, sugar, cinnamon, nutmeg, lemon juice, and chopped toasted almonds. Toss until the apples are coated evenly.

Assembly and Baking

    Assemble the Pies

    Preheat the oven to 375°F (190°C). Roll out one disk of dough on a floured surface to fit your individual pie dishes. Fill each dish with the apple mixture. Roll out the second disk of dough and cut it into strips or shapes to create a lattice or decorative topping. Place on top of the filling.

    Bake the Pies

    Brush the top crust with the beaten egg and sprinkle with sugar. Bake for 25-30 minutes or until the crust is golden brown and the filling is bubbly. Let cool for a few minutes before serving.
