Soup Preparation

    Prepare the Onions

    Slice the yellow onions thinly and set aside.

    Cook the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 30-40 minutes until they are caramelized and golden brown.

    Add Garlic and Deglaze

    Add minced garlic and cook for another minute. Then, pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom. Allow the wine to reduce for about 5 minutes.

    Add Broth and Seasonings

    Add the beef broth, thyme, bay leaves, salt, and black pepper. Bring the mixture to a boil, then reduce heat and let it simmer for 30 minutes.

    Prepare the Baguette

    While the soup simmers, slice the baguette into thick slices and toast them until golden brown.

    Serve the Soup

    Remove bay leaves from the soup. Ladle the soup into bowls, place a slice of toasted baguette on top, and sprinkle with Gruyère cheese. Place under the broiler for 2-3 minutes until the cheese is bubbly and golden.
