Making Cheese

    Prepare the Milk

    In a large pot, heat the whole milk over medium heat until it reaches 190°F (88°C). Stir occasionally to prevent scorching.

    Add Vinegar

    Once the milk reaches the desired temperature, remove it from the heat and stir in the white vinegar. Let it sit for 10 minutes to allow the curds to form.

    Strain the Curds

    Line a colander with cheesecloth and carefully pour the curds and whey into it. Allow the curds to drain for about 15 minutes.

    Mix in Salt and Rennet

    Once drained, transfer the curds to a mixing bowl. Add salt and diluted rennet (mix rennet with a little water) and mix gently. Let it sit for an additional 30 minutes.

    Mold the Cheese

    Transfer the curds into a cheese mold or a small bowl lined with cheesecloth. Press firmly to shape the cheese and remove any excess whey.

    Refrigerate

    Cover the cheese with cheesecloth and place it in the refrigerator for at least 4 hours or overnight to firm up.

    Serve

    Once firm, remove the cheese from the mold, slice, and serve as desired.
