Slow Smoke the Brisket

Preheat your smoker to 225°F (107°C). Season the beef brisket with salt and pepper. Place it in the smoker and cook for about 8-10 hours, or until the internal temperature reaches 195°F (90°C). Remove from the smoker and let it rest for at least 30 minutes.

Prepare Onion Rings

While the brisket is resting, prepare the onion rings according to package instructions or make homemade onion rings. Fry or bake until crispy and golden brown.

Assemble the Sandwich

Slice the toasted Kaiser rolls in half. Layer the smoked brisket on the bottom half, add a slice of provolone cheese, and top with two crispy onion rings. Drizzle BBQ sauce over the top and place the other half of the roll on top.

Serve

Serve the Z-Man Sandwich warm with additional BBQ sauce on the side, if desired.
