Preparation and Assembly

    Cook the Pulled Pork

    Preheat your oven to 300°F (150°C). Season the pork shoulder with salt and black pepper. Place it in a roasting pan and cover with foil. Cook for about 4-5 hours until the meat is tender and easily shredded. Remove from the oven and let it rest for 30 minutes before shredding.

    Prepare the BBQ Mayo

    In a bowl, mix mayonnaise with BBQ sauce until well combined. Set aside.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove from skillet and drain on paper towels. Once cooled, crumble into pieces.

    Fry the Jalapeños

    Slice the jalapeños into rings. Heat oil in a deep pan over medium heat. Once hot, carefully add jalapeño rings and fry until golden brown. Remove them and drain on paper towels.

    Assemble The Rocket Pig

    In a large serving dish, layer the pulled pork. Drizzle with BBQ sauce and top with bacon, crumbled pepper jack cheese, and BBQ mayo. Finally, garnish with fried jalapeños on top.
