Cooking Instructions

  1. 1

    Preparation of Chicken

Preheat your smoker to 225°F (107°C). In a bowl, mix together olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, and lemon juice. Rub this mixture all over the chicken halves.

  2. 2

    Smoking the Chicken

Place the chicken halves in the smoker, breast side up. Smoke for about 2.5 to 3 hours, or until the internal temperature reaches 165°F (74°C).

  3. 3

    Prepare the Side Dish

While the chicken is smoking, prepare your chosen side dish according to its recipe.

  4. 4

    Toast the Texas Toast

In the last 10 minutes of the chicken cooking, place the Texas toast on the grill or in the oven to toast until golden brown.

  5. 5

    Serving

Once the chicken is done, remove it from the smoker and let it rest for 10 minutes. Serve the half chicken with the side dish and toasted Texas toast.
