Ribs and Meats

Method

Preparation and Cooking

  1. 1

    Prepare the Meat

Preheat your grill or smoker to 225°F (107°C). Rub the pork ribs, beef brisket, chicken thighs, and sausage links with olive oil. In a small bowl, mix garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper. Generously season all meats with the spice mix.

  2. 2

    Cook the Ribs

Place the pork ribs on the grill/smoker, bone side down. Cook for 3-4 hours, basting with BBQ sauce every hour until tender.

  3. 3

    Cook the Brisket

After the ribs have cooked for about 1 hour, add the beef brisket to the grill/smoker. Cook for about 6-8 hours until the internal temperature reaches 195°F (90°C), basting with BBQ sauce during the last hour.

  4. 4

    Cook the Chicken and Sausage

Add the chicken thighs and sausage links to the grill/smoker during the last 1-2 hours of cooking. Cook until the chicken reaches an internal temperature of 165°F (74°C) and the sausage is heated through.

  5. 5

    Serve

Once all meats are cooked to perfection, remove from the grill/smoker, let rest for 10 minutes, then slice and serve with extra BBQ sauce on the side.
