Prepare the Pork
Trim any excess fat from the pork shoulder and cut it into large chunks.

Make the Marinade
In a bowl, mix together the brown sugar, paprika, chili powder, black pepper, salt, cayenne pepper, and liquid smoke.

Marinate the Pork
Rub the marinade all over the pork chunks and let it sit for at least 1 hour or overnight in the refrigerator.

Cook the Pork
Place the marinated pork in a slow cooker. Add the chopped onion, minced garlic, apple cider vinegar, and water. Cover and cook on low for 8-10 hours or until the pork is tender and easily pulls apart.

Shred the Pork
Remove the pork from the slow cooker and shred it using two forks. Discard any large pieces of fat.

Serve
Return the shredded pork to the slow cooker to mix with the juices. Serve on buns, tacos, or with your favorite sides.
