Marinate the Pork
In a large bowl, combine olive oil, garlic powder, onion powder, paprika, brown sugar, salt, black pepper, and cayenne pepper to create a marinade. Rub this mixture all over the pork shoulder. Cover and refrigerate for at least 4 hours, preferably overnight.

Prepare the Smoker
Soak the wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

Smoke the Pork
Place the marinated pork shoulder directly on the smoker rack. Add the soaked wood chips to the smoker box or directly onto the coals. Smoke for about 6-8 hours, or until the internal temperature reaches 195°F (90°C).
