Preparation and Smoking

    Marinate the Pork

    In a large bowl, combine olive oil, garlic powder, onion powder, paprika, brown sugar, salt, black pepper, and cayenne pepper to create a marinade. Rub this mixture all over the pork shoulder. Cover and refrigerate for at least 4 hours, preferably overnight.

    Prepare the Smoker

    Soak the wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

    Smoke the Pork

    Place the marinated pork shoulder directly on the smoker rack. Add the soaked wood chips to the smoker box or directly onto the coals. Smoke for about 6-8 hours, or until the internal temperature reaches 195°F (90°C).

    Rest and Serve

    Once done, remove the pork from the smoker and let it rest for at least 30 minutes before shredding. Serve it with your favorite BBQ sauce or sides.
