    Prepare the Meats

    Trim excess fat from the brisket and pork shoulder. Rub olive oil all over the meats.

    Season the Meats

    In a bowl, mix brown sugar, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Rub the seasoning mixture generously onto the brisket and pork shoulder.

    Cook the Brisket

    Preheat your smoker or grill to 225°F (107°C). Place the brisket in the smoker and cook for about 6-8 hours, or until it reaches an internal temperature of 195°F (90°C).

    Cook the Pork Shoulder

    While the brisket is cooking, place the pork shoulder in the smoker. Cook for about 8-10 hours, or until it reaches an internal temperature of 195°F (90°C).

    Cook the Sausages

    Add the sausages to the smoker during the last 2 hours of cooking. Cook until they reach an internal temperature of 160°F (71°C).

    Rest the Meats

    Once cooked, remove the meats from the smoker and let them rest for at least 30 minutes before slicing or pulling.

    Prepare Burnt Ends

    Cut the brisket into cubes and place them in a baking dish. Toss with BBQ sauce and cook in the smoker for an additional 1-2 hours until caramelized.
