1. Prepare the Brisket
Trim excess fat from the brisket and cut it into 1-inch cubes.
2. Season the Meat
In a bowl, combine kosher salt, black pepper, garlic powder, onion powder, smoked paprika, and brown sugar. Rub the seasoning mixture all over the brisket cubes.
3. Smoke the Brisket
Preheat your smoker to 225°F (107°C). Place the brisket cubes onto the smoker grate and smoke for about 6 hours until they reach an internal temperature of 195°F (90°C).
4. Caramelize the Burnt Ends
Remove the brisket from the smoker and place the cubes in a disposable aluminum pan. Add your favorite barbecue sauce and mix well. Cover the pan with aluminum foil and return it to the smoker for an additional 2 hours.
5. Serve
After the final smoking, remove the burnt ends from the smoker, let them rest for 15 minutes, then serve warm with additional barbecue sauce if desired.
