Cut the chicken breast into thin strips, about 1 inch wide.

Make the Marinade

In a large bowl, combine soy sauce, peanut butter, brown sugar, minced garlic, grated ginger, lime juice, coconut milk, chili powder, salt, and black pepper. Whisk until smooth.

Marinate the Chicken

Add the chicken strips to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.

Prepare the Grill

Preheat a grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.

Skewer the Chicken

Thread the marinated chicken strips onto skewers, leaving a little space between each piece.
