Method
Meatballs
Prepare the Meatball Mixture
In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, egg, minced garlic, chopped parsley, salt, and black pepper.
Form Meatballs
Using your hands, mix the ingredients until just combined and form into small meatballs, about 1 inch in diameter.
Cook Meatballs
Preheat the oven to 400°F (200°C). Place meatballs on a baking sheet lined with parchment paper and bake for 20-25 minutes until cooked through.
Toasted Herbed Buns
Prepare the Buns
In a small bowl, mix softened butter with dried Italian herbs.
Toast the Buns
Spread the herbed butter on the cut sides of each slider bun and place them cut-side up on a baking sheet. Toast in the oven for about 5-7 minutes until golden.
Tomato Sauce
Add Tomatoes and Season
Stir in the canned crushed tomatoes, dried basil, salt, and black pepper. Simmer for 15-20 minutes allowing flavors to meld.
House Made Ricotta
Heat the Dairy
In a saucepan over medium heat, combine whole milk and heavy cream. Heat until just below boiling.
Curdle the Milk
Remove from heat and stir in white vinegar and salt. Let sit for 10 minutes to allow curds to form.
Strain the Ricotta
Pour the mixture through a fine-mesh strainer or cheesecloth to separate the curds from the whey. Let drain for about 30 minutes.
Hungarian Mayo
Mix the Ingredients
In a bowl, combine mayonnaise, Hungarian paprika, lemon juice, and salt. Stir until well combined.
Assembly
Assemble the Sliders
Place a meatball on the bottom half of each toasted bun. Add a spoonful of tomato sauce, a dollop of ricotta, and a smear of Hungarian mayo. Top with the other half of the bun and serve.
