Prepare the Filling

In a mixing bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, Gorgonzola cheese, egg, salt, and black pepper. Mix until well combined and smooth.

Assemble the Ravioli

Take a wonton wrapper and place about 1 tablespoon of the cheese filling in the center. Moisten the edges of the wrapper with a little water, fold it over to create a triangle, and press to seal. Repeat with remaining wrappers and filling.

Fry the Ravioli

In a deep skillet or pot, heat the oil over medium heat. Once hot, carefully add the ravioli in batches, frying until golden brown on both sides, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

Sauté the Garlic

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Cook the Sauce

Add crushed tomatoes, dried oregano, salt, and sugar to the saucepan. Stir well and let simmer for 15-20 minutes, stirring occasionally.

Finish the Sauce

Stir in fresh basil leaves just before serving. Adjust seasoning to taste.
