    Make the Dough

    In a large bowl, mix the flour and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs. Stir in the cold water and chopped rosemary until the dough comes together. Wrap in plastic wrap and refrigerate for at least 30 minutes.

    Prepare the Filling

    While the dough is chilling, chop the cured black olives finely. Set aside.

    Roll Out the Dough

    Once the dough has chilled, roll it out on a floured surface to about 1/8 inch thick. Cut into circles or desired shapes.

    Fill and Bake

    Place a small amount of the chopped olives in the center of each dough circle. Fold the dough over to create half-moon shapes and crimp the edges to seal. Place on a baking sheet lined with parchment paper. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until golden brown.
