Preparation of Duck

    Score the Skin

    Score the skin of the duck breasts in a criss-cross pattern, being careful not to cut into the meat. Season with salt and black pepper.

    Sear the Duck

    Place the duck breasts skin-side down in a cold skillet. Turn the heat to medium-high and cook until the skin is crispy and golden, about 6-8 minutes. Flip and cook for an additional 3-4 minutes for medium-rare. Remove from the skillet and let rest.

Wild Rice Stuffing

    Cook the Rice

    In a saucepan, bring chicken broth to a boil. Add wild rice, reduce to a simmer, cover, and cook for about 45 minutes or until tender.

    Sauté Vegetables

    In a skillet, melt butter over medium heat. Add onion, celery, and mushrooms, sauté until softened, about 5-7 minutes. Add cooked rice, thyme, salt, and pepper, mixing well.

Brussels Sprouts

    Roast the Brussels Sprouts

    Preheat the oven to 400°F (200°C). Toss Brussels sprouts with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, until golden and tender.

Orange Demi

    Make the Demi

    In a saucepan, combine orange juice and chicken stock. Bring to a boil and reduce to a simmer until reduced by half. Mix cornstarch with water to create a slurry and stir into the sauce to thicken. Add honey and adjust seasoning.
