Preparation and Cooking

    Prepare the Filet Mignon

    Preheat your oven to 400°F (200°C). Season the filet mignon steaks generously with salt and black pepper. Heat 1 tablespoon of olive oil in a large oven-proof skillet over medium-high heat. Once hot, add the steaks and sear for about 3-4 minutes on each side until browned.

    Finish in the Oven

    Transfer the skillet to the preheated oven and cook for an additional 5-7 minutes for medium-rare, or until desired doneness. Remove from the oven and let the steaks rest for 5 minutes.

    Prepare the Vegetables

    While the filet mignon is resting, steam the broccoli and sliced carrots until tender, about 5-7 minutes. Drizzle with remaining olive oil and season with salt to taste.

    Make the Dijon Bordelaise Sauce

    In the same skillet used for the steak, add red wine and bring to a simmer over medium heat. Scrape up any browned bits from the bottom of the skillet. Let it reduce by half, then stir in beef stock and Dijon mustard. Simmer until thickened, about 5 minutes. Finish with butter for a glossy sauce.

    Serve

    Slice the filet mignon and plate it with the steamed broccoli and carrots. Drizzle the Dijon bordelaise sauce over the steak and serve immediately.
