    Prepare the Dough

    In a small bowl, dissolve sugar in warm water and sprinkle yeast over it. Let it sit for about 5-10 minutes until foamy.

    Mix Ingredients

    In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

    Let Dough Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Prepare Onion Filling

    In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until softened and translucent. Stir in chopped parsley, and let cool.

    Shape the Bread

    Once the dough has risen, punch it down and divide it into small pieces. Flatten each piece, add a spoonful of the onion filling, and shape it into a knot.

    Second Rise

    Place the knots on a baking sheet lined with parchment paper, cover, and let rise for another 30 minutes.

    Bake

    Preheat the oven to 375°F (190°C). Bake the knots for 20-25 minutes or until golden brown.

    Let the bread cool slightly before serving with whipped ricotta.
