Masa Corn Dumplings
Method
Preparation
- 1
Mix the Dough
In a large mixing bowl, combine masa harina, corn kernels, water, calabrian chili paste, grated parsnip, chopped cilantro, and salt. Mix until a smooth dough forms.
- 2
Shape the Dumplings
Take small portions of the dough and roll them into balls, about 1 inch in diameter. Flatten them slightly to form dumplings.
- 3
Cook the Dumplings
Bring a large pot of salted water to a boil. Gently drop the dumplings into the boiling water and cook for about 10-12 minutes, or until they float to the surface.
- 4
Serve
Using a slotted spoon, remove the dumplings from the water and transfer them to a serving platter. Drizzle with extra calabrian chili paste if desired, and garnish with additional chopped cilantro.
