Prepare the Gelatin
In a small bowl, sprinkle the gelatin powder over 2 tablespoons of cold water and let it sit for about 5 minutes to bloom.

Heat the Cream and Sugar
In a saucepan, combine the heavy cream and sugar. Heat over medium heat until the mixture is hot but not boiling, stirring until the sugar has dissolved.

Incorporate the Gelatin
Remove the saucepan from heat. Stir in the bloomed gelatin until fully dissolved. Add the buttermilk and vanilla extract, mixing well.

Chill the Mixture
Pour the mixture into individual serving glasses or molds. Refrigerate for at least 4 hours or until set.

Serve
Once set, serve the panna cotta chilled, drizzled with chili honey, cherry balsamic, and topped with chopped pistachios.
