Slice the medium onion into thin strips. Heat olive oil in a skillet over medium heat and add the onions. Sprinkle with Cajun seasoning, salt, and black pepper. Sauté until the onions are caramelized and golden brown, about 8-10 minutes.

In a small bowl, combine the Cajun lime sauce with a pinch of Cajun seasoning for extra flavor. Stir well and set aside.

Assemble the Dish
In a baking dish, layer the sautéed onions, followed by the pepperjack cheese. Drizzle the Cajun lime sauce over the top.

Preheat your oven's broiler. Place the baking dish under the broiler for about 3-5 minutes, or until the cheese is melted and bubbly. Keep an eye on it to prevent burning.
