Preparation

Peel the russet potatoes and cut them into evenly sized fries, about 1/4 inch thick.

Soaking

Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Drying

Drain the fries and pat them dry with paper towels to remove excess moisture.

Heating Oil

In a deep fryer or a large heavy pot, heat the cholesterol-free soybean oil to 350°F (175°C).

Frying

Carefully add the dried fries in batches to the hot oil and fry for about 5-7 minutes until golden brown.

Draining

Remove the fries with a slotted spoon and drain them on paper towels.

Seasoning

While still hot, sprinkle the fries with salt and pepper to taste.
