    Prepare the Potatoes

    Wash the Russet potatoes thoroughly under cold water. Peel them if desired, then cut them into thin slices using a sharp knife or a mandoline slicer.

    Soak the Potatoes

    Place the sliced potatoes in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch, which helps to achieve crispiness.

    Heat the Oil

    In a large, deep pot or a deep fryer, heat the cholesterol-free soybean oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chips

    Drain the soaked potatoes and pat them dry with a paper towel. Carefully add a batch of potato slices to the hot oil, ensuring not to overcrowd the pot. Fry for about 3-5 minutes or until golden brown and crispy.

    Drain and Season

    Using a slotted spoon, remove the chips from the oil and transfer them to a plate lined with paper towels to drain excess oil. Immediately season with salt and pepper while still hot.

    Serve

    Repeat the frying process with the remaining potato slices. Serve the fresh cut chips hot, on their own or with your favorite dipping sauce.
